This recipe is for a '10 Half Size Steam Table Pan', which sould serve ≈20 people. You can also double the recipe for a '15 Full Size Steam Table Pan'.
Ingredients
Fry 1 Pound of meat or just add a meat alternative:
Breakfast sausage
Ground beef with taco spices
Refried beans without lard
1 Pound block of Velveeta cheese, cut into smaller pieces
1 Pound smoked Gouda cheese, grated
1 Can (10 oz) RO*TEL Original Diced Tomatoes and Green Chilies
1 Can (10 oz) RO*TEL Fire Roasted Diced Tomatoes and Green Chilies
1 Can (10 oz) can of cream of mushroom soup
½ Cup chopped fresh cilantro (optional)
Tortilla chips, for serving
Steps
Add all ingredients into a steam table pan and mix well
Smoke and stir every 20 minutes
At 200°F (super smoke), for 1 hour
At 300°F, for 1 hour and until all mixed
While I really like using a smoker, this can also be done in an oven or on a grill.
